Gluten free baking is often synonymous with both xanthan gum, extra dairy and eggs to replace the lack of gluten. What happens, then, when you want or need to bake without either? Today’s roundup of gluten free vegan recipes without xanthan gum addresses exactly that.

The recipes in this roundup are obviously gluten free, vegan (and thus dairy/egg free) and xanthan gum free. Where possible, I also aim to cater to as many diets as possible. This includes low FODMAP, onion and garlic free, nut free and recipes without starchy flours for a more SIBO friendly approach.

Gluten free vegan bagels

These bagels are one of my favourite recipes to date. They are boiled (as is traditional) and made entirely without xanthan gum, eggs or dairy. Easy and absolutely delicious.

Gluten free porridge without oats

In Australia, oats are considered wheat free but not gluten free. I wanted to develop this porridge recipe for those of us who can’t eat oats. Use plant based dairy and you’ve got yourself a delicious and comforting gluten free vegan breakfast. There’s also a carrot cake version, if you are so inclined.

Gluten free vegan high protein bread

If you want your toast to pack a protein punch, try this high protein vegan bread. It uses buckwheat flour, cannellini beans and optional hemp seeds to give each slice around 10g of protein.

These buckwheat muffins are made with 100% buckwheat flour, no starches or xanthan gum in sight. They can use regular or plant based dairy, so choose the plant based option to keep them vegan.

Gluten free quinoa wraps

These quinoa wraps (related to my buckwheat wraps below) are made from 100% quinoa flour. They use psyllium husk powder, a scald and vegan or plant based yoghurt to create delightfully flexible wraps. Use the plant based option to ensure they remain vegan. I have a teff flour version of these wraps, along with the buckwheat version further down this list.

We’ve discussed the quinoa wraps, now it’s time to get onto my beloved buckwheat wraps. They’re made with 100% buckwheat flour, a scald, psyllium husk powder and yoghurt. Choose plant based yoghurt to keep them vegan.

Everybody needs a good lasagne recipe, even the gluten free vegans. This recipe is also low FODMAP, meaning there are no onion, garlic or lentils involved. Choose a store bought brand of gluten free lasagne sheets without xanthan gum to keep this dish xanthan gum free.

Gluten free vegan dumpling wrappers

These dumpling wrappers are such a pleasure to work with that you will forget they are xanthan gum free, gluten free and vegan. They roll, fold and pleat just like regular dumplings, and match up perfectly in quantity with my low FODMAP tofu book choi dumpling filling recipe. If you can’t have rice flour, I have developed a rice flour free version as well.

Vegan low FODMAP bolognese
