Gluten free dairy free bread recipes without xanthan gum

Gluten free bread sometimes needs to be filled with all manner of things to replicate the taste and texture of wheat based products. Dairy products like milk powder are a common ingredient in lots of store bought gluten free breads. This is why I have written a roundup of all my gluten free dairy free bread recipes without xanthan gum.

Gluten free dairy free bread recipes without xanthan gum

A bread without gluten, dairy and xanthan gum can be difficult to find. As such, I wanted to round up all my recipes that fit these criteria into one convenient place. Where possible, I also aim to include other dietary niches, such as nut free, low FODMAP and grain free. This roundup includes a number of recipes that cater to these diets.

Gluten free Bergen style bread without xanthan gum

This Bergen style gluten free seeded bread is a recipe in my cookbook, Intolerance Friendly Kitchen. It is one of many gluten free, dairy free and xanthan gum free recipes in the book.

Yeast free, gluten free bread without xanthan gum

Speaking of, another recipe in Intolerance Friendly Kitchen is this gluten free buckwheat bread without yeast. I know that yeast can be a no-go for many (I have recently published yeast free gluten free hot cross buns and cinnamon rolls) which is why I developed the recipe. It is dairy free, vegan, nut free, xanthan gum free and yeast free.

Gluten free vegan high protein bread

I love this recipe because it enables me, a lazy girl, to get some protein in at breakfast. It uses buckwheat flour, cannellini beans and (optional) hemp seeds to achieve around 10g protein per slice. Serve it with peanut butter and you’re well on your way to a high protein breakfast.

Gluten free buckwheat wraps

Ah, my favourite buckwheat wraps. Because I test recipes for a living, I generally don’t make the same recipes on repeat. These buckwheat wraps are one exception to that rule: I make them every week. They are xanthan gum free, nut free and use 100% buckwheat flour. Make sure to use the dairy free yoghurt option to ensure they remain dairy free.

  1. Can you tell me if one could or should use Psyllium Husk, and Xanthan together in a recipe? I understand the workings of Psyllium Husk, but I’m not clear on Xanthan gum, and wondering if they are compatible together. Have read that it is beneficial to the blends that don’t have it included in the flours.
    Thank you for your thoughts.

    1. Hi J,

You can definitely use them together in recipes (I do occasionally – the croissants are one example). Because xanthan gum doesn’t agree with me, I don’t use it often. I think it’s overused in gluten free cooking/baking which is why I develop recipes without it where I can. Lots of recipes online use it so I figured there must be people like me who want to cook without it.

Because I don’t use it much I’m probably not the best person to ask about the benefits and how to use it. I will say I find it best when used in very small amounts because it tends to get a bit slimy and sticky in larger quantities 🙂
