Dairy products like milk powder are a common ingredient in lots of store bought gluten free breads. Gluten free buckwheat bread without xanthan gum
All roads lead to Rome and all (my) roundups lead to this buckwheat bread. It is naturally dairy free and vegan, with no eggs or xanthan gum in sight. It is made predominantly from buckwheat flour with a small amount of starch for a pleasant crumb. Undoubtedly one of my favourite gluten free dairy free bread recipes without xanthan gum.
Gluten free bagels without xanthan gum
These bagels are made the traditional way – boiled and baked. They utilise psyllium husk powder and a scald to create an elastic dough and a delicious chewy bagel. They are gluten free, xanthan gum free, dairy free and completely vegan.

Ah, my favourite buckwheat wraps. Because I test recipes for a living, I generally don’t make the same recipes on repeat. These buckwheat wraps are one exception to that rule: I make them every week. They are xanthan gum free, nut free and use 100% buckwheat flour. Make sure to use the dairy free yoghurt option to ensure they remain dairy free.
Gluten free quinoa wraps
Because I loved the buckwheat wraps so much, I make a quinoa version! Like the buckwheat wraps, these are xanthan gum free, nut free and dairy free if you use the plant based yoghurt option. They’re super flexible and keep amazingly in the freezer.
Gluten free teff wraps
One last wrap recipe! These wraps, like those before them, are Low FODMAP, gluten free and dairy free if you use a plant based yoghurt. They’re delicious, simple and keep well in the freezer.
Gluten free seeded bread
Ending on a high note with my new favourite bread recipe! This gluten free seeded loaf is lofty and delicious. It also happens to be naturally dairy free/vegan, xanthan gum free, nut free and egg free.
Can you tell me if one could or should use Psyllium Husk, and Xanthan together in a recipe? I understand the workings of Psyllium Husk, but I’m not clear on Xanthan gum, and wondering if they are compatible together. Have read that it is beneficial to the blends that don’t have it included in the flours.

Hi J,
You can definitely use them together in recipes (I do occasionally – the croissants are one example). Because xanthan gum doesn’t agree with me, I don’t use it often. I think it’s overused in gluten free cooking/baking which is why I develop recipes without it where I can. Lots of recipes online use it so I figured there must be people like me who want to cook without it.
Because I don’t use it much I’m probably not the best person to ask about the benefits and how to use it. I will say I find it best when used in very small amounts because it tends to get a bit slimy and sticky in larger quantities 🙂
