I love experimenting with gluten free recipes, but I do sometimes tend to lean towards my preferred flour combinations. White rice flour, tapioca flour and perhaps some sorghum flour are my most commonly used flours for their taste and accessibility. Recently, however, I have been trying to develop recipes with other flours. So today I thought I’d share my favourite buckwheat flour recipes that I have developed thus far.
Buckwheat flour recipes
These buckwheat flour recipes are all gluten free and low FODMAP. They are vegetarian or vegan, often with egg free options for intolerances or allergies. Where possible, I also try to develop recipes without xanthan gum or nuts.

Gluten free buckwheat bread
This gluten free buckwheat bread recipe is one of my favourite breads at the moment. It’s deeply earthy thanks to the volume of buckwheat flour, and it uses just a small amount of tapioca or cassava flour for elasticity. The bread is vegan (and thus egg free and dairy free) and xanthan gum free, too.
Gluten free croissants
Yes, the gluten free croissants (or pains au chocolat) again. These are one of my favourite recipes from my cookbook, Intolerance Friendly Kitchen. The dough can be used to make danishes, as well. While it contains xanthan gum, there’s a sourdough version of the recipe that is xanthan gum free.
Low FODMAP, gluten free corn fritters
These fritters can be made entirely with buckwheat flour or entirely with cassava flour. They use a low FODMAP quantity of canned corn and spring onion greens for flavour. I love freezing them to have on hand for snacks or light dinners.
Yeast free buckwheat bread
This yeast free buckwheat bread is a recipe from my cookbook, Intolerance Friendly Kitchen. It is vegan, xanthan gum free and nut free. The bread uses baking powder for leavening, which means it is suitable for people who can’t have yeast.
Sweet and sticky buckwheat noodles
OK, this isn’t a buckwheat flour recipe per se. It is, however, a completely delicious way to use 100% buckwheat noodles. Not all buckwheat noodles are 100% buckwheat (or even gluten free) so make sure you read the labels. There is a recipe for 100% buckwheat noodles that are vegan and xanthan gum free in my buckwheat recipe e-book.
Vegan, gluten free protein pancakes
These vegan, gluten free protein pancakes use buckwheat flour to replace the binding qualities of eggs. They’re a deliciously high protein single serve breakfast that can be customised in any number of ways.
Gluten free carrot muffins
These gluten free carrot muffins are one of my favourite buckwheat flour recipes. They’re full of flavour and spice with just the right amount of sweetness. Buckwheat flour provides elasticity and stretch, while white rice flour provides the backbone.
Vegan, gluten free hot cross buns
These vegan and gluten free hot cross buns hold their shape courtesy of our good friend, buckwheat flour. They don’t use any starches or xanthan gum, and are nut free as well.
Buckwheat flour choc chip cookies
Another recipe from my cookbook, Intolerance Friendly Kitchen, these choc chip cookies use 100% buckwheat flour. They’re earthy, chewy and delicious.
Gluten free banana carrot muffins
It seems like my new favourite flour combination is rice flour and buckwheat flour. These banana carrot muffins are proof. They’re lightly sweetened, xanthan gum free and nut free, making them the perfect lunchbox snack (adult or not).
Gluten free zucchini fritters
These zucchini fritters hold together perfectly thanks to buckwheat flour’s elastic qualities. They make a delicious lunch, snack or light dinner, and freeze perfectly too.
Vegan, gluten free sandwich bread
This gluten free vegan sandwich bread is quick and easy to make. It’s also xanthan gum free, egg free, dairy free and nut free. What more could you want in a loaf?
Gluten free vegan dumpling wrappers
One last recipe from Intolerance Friendly Kitchen, because these dumpling wrappers can be made with any combination of gluten free flours you like. The wrappers are xanthan gum free yet super flexible. I also have an 100% buckwheat flour version in my buckwheat flour e-book.
