The more cookies I make, the more I realise what a science and an art a good cookie recipe is. Different ingredients influence the spread, colour and texture of a cookie, and a good recipe will bring these all together into the perfect cookie harmony. Gluten free cookie making is another level up again, so it can be hard to find great recipes that work. With that in mind I wanted to bring all of my gluten free cookie recipes without xanthan gum together into one convenient spot.
Gluten free cookies without xanthan gum
These recipes use simple gluten free flour combinations and are all xanthan gum free. I don’t use gluten free baking mixes as I find they are too much of a blanket approach. It also becomes difficult when people in other countries can’t access a certain blend.
These recipes are all also completely oat and oat flour free. Oats are not considered gluten free in Australia, as they contain a protein that is similar to gluten. Coeliac Australia says that more research is needed into whether oat flour can cause an immune reaction in coeliacs. As such, all of my recipes are made without any oat products.
Because I love to cater to as many different diets as possible, these cookie recipes are appropriate for a whole host of different dietary needs. There are plenty of egg free, dairy free and vegan options, as well as grain free and nut free options. I hope there is something for every set of needs.
As the title suggests, these recipes are also xanthan gum free. Xanthan gum, while not a dangerous or harmful ingredient, doesn’t agree with everyone (myself included). It is quite hard to find gluten free recipes without xanthan gum, which is why I develop them. I hope they are helpful for people like me who don’t tolerate it well.
