It can be tricky to wrangle gluten free flours into something resembling bread. This often means that gluten free bread recipes are packed full of sugar, xanthan gum, eggs and dairy just to get them over the line. With that in mind, I wanted to collate all of my best ‘free from’ gluten free bread recipes into one easy post.
‘Free from’ gluten free bread recipes
These recipes are all gluten free, of course. However, I always try to cater to a breadth of dietary requirements while developing gluten free recipes. I know how difficult it can be to find foods that cater to multiple requirements at once.
So, this roundup includes gluten free yeast free breads, gluten free egg free breads and breads without xanthan gum. There are low starch* options, starch free* options, gluten free sourdough recipes and dairy free recipes. I have included a whole host of different gluten free flours in the breads, catering to needs such as gluten free rice flour free.
*Starch, for our context, refers to the starchy flours that often make up the bulk of gluten free bread recipes. Starches include tapioca flour, cornstarch and glutinous rice flour. These types of flours are very high in carbohydrates and don’t contain many nutrients. They can be unsuitable for those with SIBO or on low carb diets, among other things. They are not inherently bad and can be incredibly helpful in gluten free baking, they just aren’t always for everyone.
I hope you find a gluten free bread recipe that you love and that works for your dietaries. Let me know if there are any other dietary requirements you’d like to see. Any excuse to develop a loaf!

Buckwheat bread
This buckwheat bread is one of those recipes I always come back to. It is easy to make and uses majority buckwheat flour with a small amount of tapioca flour for elasticity. The recipe is gluten free, xanthan gum free, egg free and completely vegan.
Yeast free buckwheat bread
And for those who can’t have yeast, fear not! This yeast free, gluten free buckwheat bread is also egg free and xanthan gum free. You can use regular or dairy free yoghurt, meaning the loaf can easily be dairy free/vegan as well.
Buckwheat seeded bread
Any excuse to develop another buckwheat recipe! This bread uses majority buckwheat flour with a small amount of starch for elasticity and texture. It is jam packed full of seeds making it a great high fibre option. The bread is gluten free, xanthan gum free, vegan and can be made without sesame seeds. In fact, the seed component is flexible and open to what works for you.
Gluten free seeded bread
Can you tell I love seeded bread? This recipe is gluten free, vegan and xanthan gum free. It combines buckwheat flour, white rice flour and tapioca flour for a light and fluffy crumb. You can customise the seeds to suit your needs and dietaries, too.
Gluten free vegan bread recipes
A roundup within a roundup! All of my favourite gluten free vegan bread recipes in one convenient place. Naturally, vegan means dairy free and egg free. There are plenty of xanthan gum free and nut free options in there as well.
Yeast free bread
For those who can’t have yeast, this loaf is for you! It is egg free, xanthan gum free, yeast free and can easily be made vegan. The bread has a more neutral taste and colour as compared to my yeast free buckwheat bread recipe. It makes a delightful slice of toast, too.
Gluten free xanthan gum free bread recipes
One more roundup within a roundup up, if I may? Here is a collection of all my gluten free, xanthan gum free bread recipes. Making bread without xanthan gum is ideal for people with corn allergies or for those who just don’t agree with xanthan gum.
Grain free bread
I haven’t forgotten the grain free amongst us! This recipe is actually the closest I have ever come to a gluten free white bread without xanthan gum. Except, of course, that it is completely grain free. This recipe uses milk and eggs but I have also developed a vegan version which is below.
Grain free vegan bread
And here we are with the aforementioned vegan version! This recipe is grain free, vegan, xanthan gum free and nut free. It is a lovely white bread style loaf that is suitable for a whole host of dietary requirements.
Gluten free focaccia
This focaccia took me forever to develop and I am so glad I stuck with it. The focaccia is dairy free, egg free and vegan as well as xanthan gum free. It is the perfect fluffy crumb with golden brown crispy edges. You can top it with whatever you like or simply bake it plain.
Yeast free, gluten free focaccia
I couldn’t forget my yeast free friends! This delicious gluten free yeast free focaccia is light, fluffy and chewy. It uses yoghurt (regular or vegan) and psyllium husk for the perfect texture and browning. This is a recipe in my gluten free, yeast free e-book.
Oat flour bread
This nutty and delicious oat flour bread is either gluten free or wheat free, depending on where you live. In Australia, oats can be wheat free but not gluten free. This is because they contain a protein called avenin which is very similar to gluten. If they are manufactured in a dedicated environment, they can be considered wheat free. In other countries, oats manufactured in a dedicated environment are often considered gluten free.
Anyway, onto the bread! This delicious loaf is yeast free, xanthan gum free and nut free. It is made with yoghurt which can be regular or vegan and contains no eggs. The flavour is almost like a cross between a bread and scone – perfectly nutty and delicious.
Millet bread
This delicious gluten free millet bread uses millet flour, light buckwheat flour and tapioca flour to achieve a lovely open crumb. It is vegan, nut free, xanthan gum free and freezes beautifully.
Quinoa bread
A delicious little quinoa number that is packed full of nutrition. This loaf is gluten free, egg free, dairy free, vegan, xanthan gum free and nut free.
Sorghum bread
A delicious and lofty majority sorghum flour bread that is gluten free, vegan, xanthan gum free and nut free. It has an impressive proofing height, too.
Teff bread
Teff flour is surprisingly low key to work with so this recipe uses majority teff and a small amount of tapioca flour for elasticity. It is xanthan gum free, egg free, vegan and absolutely delicious.
Gluten free sourdough starter
If you’re going to dive into the world of gluten free sourdough bread, you’ll need a starter. This guide covers everything you need to know about creating and maintaining a gluten free sourdough starter.
100% buckwheat sourdough bread
This is a recipe from my buckwheat flour e-book and one that I absolutely adore. It is made from 100% buckwheat flour – no starches and no other flours. It is xanthan gum free, made from homemade gluten free sourdough starter and vegan.
Gluten free sourdough without rice flour
Most of my gluten free sourdough recipes use rice flour, so I developed this one for people who can’t have rice. It is still xanthan gum free, vegan and nut free and delicious – no rice flour required.
Gluten free vegan sourdough bread
And for those who can have rice flour, here’s the first gluten free sourdough bread I published on my site. I still love the recipe as much as ever and it is conveniently xanthan gum free, vegan and nut free.
High protein gluten free bread
Looking for an easy way to get some extra protein in the morning? Look no further than this gluten free high protein bread. It uses buckwheat flour and cottage cheese to bring the protein up to 10g per slice.
This bread is nut free and xanthan gum free, but a lot of store bought cottage cheese does contain sneaky xanthan gum. For a dairy free/vegan option, I have a version that uses beans! I promise you can’t taste them once the bread is toasted.
Gluten free vegan bagels
For too long, gluten free eaters have been deprived of a good bagel. No longer! This recipe is boiled and then baked, just like a regular bagel. The bagels have a chewy outer crust and fluffy crumb as every good bagel should. Better yet, they are xanthan gum free, nut free, egg free and completely vegan. I top them with my low FODMAP everything bagel seasoning.
Low histamine gluten free bread
I have recently become intimately familiar with the concept of histamines and a low histamine diet, sadly. I am even sadder to report that the diet has helped me and I will be factoring into my meals for the foreseeable. Anyway, the silver lining is new low histamine recipes, starting with this low histamine bread. It is yeast free, egg free, xanthan gum free and has an easy vegan option.
Gluten free vegan cornbread
Cornbread is still bread, right? This recipe is gluten free, xanthan gum free and completely vegan. It uses canned creamed corn (which is different to homemade) which amps up the corn flavour and holds everything together. Simple and delicious.
Gluten free wraps
Store bought gluten free wraps often leave a lot to be desired. Regularly choking down the ‘cardboard’ while my wrap fillings spilt out of all the cracks inspired me to develop my own gluten free wrap recipes. Sure, there is the original recipe which is linked below. However, there are also:
- Buckwheat wraps
- Teff wraps
- Cassava flour wraps
- Quinoa wraps
- Oat wraps (gluten free or wheat free, depending on where you live and which brand you buy)
All of these recipes are gluten free, xanthan gum free, nut free and egg free. They use yoghurt which can be regular or dairy free, meaning they are easily vegan as well.
