On the topic of these vegan, gluten free blueberry muffins, I’ve learned that you can: use regular dairy yoghurt and butter if you don’t need them to be vegan, use panela/rapadura sugar if that’s your thing, chop and change (use vegan butter but regular yoghurt and vice versa) or use oil instead of butter. This is a gluten free chocolate cake recipe uses only one flour, no blends, no xanthan gum, no nuts, and can easily be made dairy free. If dairy is your thing though, I highly recommend you make the chocolate brown butter buttercream to go with it. Recipe is linked!
